Don't we all feel like an ice cream in the heat of the summer days? Or maybe like a nice-cream! They sound the same, but we all know they are not. Once you try the recipe for this nice-cream cake you will see it's not impossible to have all of the joy (and all of the endorphins) of eating ice cream without all the calories and the guilt! 

Ingredients: 
For the nice-cream:
5 bananas, cut in half and frozen
1/2 can of coconut milk

For the raw chocolate: 
1 cup coconut oil
1 cup cocoa powder
3 tbsp Agave nectar

For the crust: 
3 cups coconut flakes
1 cup cocoa powder
4 Medjool dates
1/4 cup Agave
1/4 coconut oil
1/2 tsp salt
cacao nibs

Preparation: 
1) Start with preparing the crust. Put all the ingredients except the cacao nibs in a food processor and mix until well combined. Add the nibs last and just stir them in with a spatula to add some extra crunch. 
2) Prepare the raw chocolate by melting your coconut oil on Bain Marie and adding the raw cocoa powder and agave. If you want it sweeter or not as sweet you can adjust the quantity of the nectar. 
3) Last but not least - the nice-cream! Put the frozen bananas in a food processor and start blending. Add the coconut milk gradually until you arrive to the desired thickness. It has to have the consistency of a regular ice cream, I'm sure you know how that looks! 
4) Assembling the cake is easy! Line a springform cake pan with parchment paper. First goes the crust mixture and you can decorate the edges with the back of a wooden spoon to make them curly and pretty when you take your cake out of the form. Then goes the nicecream and finally just pour over your raw chocolate. 
5) Place your cake in the freezer for at least an hour, so the chocolate and crust can set. Then decorate and enjoy this yummy treat! 


This cake is just perfect!
It's vegan and totally gluten free and it tastes amazing! It's just like banana ice cream with some dark chocolate topping...oh, does it get better than this?
