RECIPE: Chocolate Chia Pudding with Papaya

Alright...long time no see.
I apologize for being away for so long. Playoffs were crazy, season ended, I was overwhelmed with a million things to schedule and organize, there was a lot of traveling too, packing, unpacking...and yes, these are just apologies.
Truth is I didn't find any time and motivation to write a post. I fell short of many things but I will share with you some of that experience in another blog post in the Mind section soon. 

Now let me get back to what I know best - posting recipes! 

This one is a super easy to make, very delicious dessert and it's my friend's Berit favorite! 

Chocolate Chia Pudding with Papaya

Ingredients (serves 4)
60gr Chia seeds
360ml unsweetened nut milk (I prefer almond)
20gr of unsweetened cocoa powder
5-6 pitted Medjool dates
pinch of salt
1 ripe papaya
1 handful of Goji berries
1 handful cacao nibs
fresh mint leaves

Preparation: 
1) Pour nut milk in a blender. Add dates, cacao and pinch of salt. Blend until smooth. *Note: If your dates are not the soft ones, soak them in water earlier. Having a powerful blender helps too!
2) Add chia seeds to the mixture and stir with a spoon. If you want to make less than 4 erves just remember that the amount of chia requires 6 times the amount of liquids. You can easily adjust to make more pudding or reduce and make less. 
3) Put the chia mixture in the refrigerator overnight or for at least 3-4 hours. 
4) Assemble your glasses/jars with a layer of chia pudding, layer of chopped papaya, Goji berries and cacao nibs and then repeat - chia, fruit, chia, fruit and etc. until the jars are filled. 
5) Finally top with some more fruit, sprinkle cacao nibs and decorate with fresh mint leaves! 

Et voila!
